The La Conserva coffee cherries undergo an extended fermentation process: coffee cherries being sun-dried for 10 hours before being immersed in water for 20-30 more hours of fermentation. This gives a flavour brimming with juicy stone-fruit notes. This coffee is of outstanding quality and complexity - with a soft malic acidity, a coated syrupy mouthfeel, and an aftertaste of vanilla and white chocolate which is sweetly spiced. These combine to evoke thoughts of peach pavlova or panna cotta with ripe mango.

Redemption Roasters commenced operations in Aylesbury Young Offenders Prison with a mission to help reduce re-offending rates by skilling up the young people to help them find jobs and reintegrate into society. They are trained in competition-level barista skills.
The project has now expanded to 9 prisons and now also has an enlarged roastery facility in HMP The Mount near Hemel Hempstead.
Small batches of beans are expertly roasted led by a Head Roaster and Assistant Roaster who also train professional roasting skills. So not only is the coffee ethically sourced but the roasting process is socially responsible too.
