This coffee originates from the Falcon Speciality in Cajamarca region in the north of Peru - near the city of Jaen. The coffee originated from Huabal and Chirinos districts. The producers that are part of the program in Peru deliver parchment to their warehouse in Jaen. Every delivery goes through green analysis (defect counts, moisture content, ration parchment to green) and is test roasted and cupped. The price paid to the producer depends upon the results of these quality analyses. This coffee lot is named after the city Chachapoyas which is the capital of the neighbouring Amazonas region. Nearby is a site called Kuelap, a walled settlement built in 6AD - also known as the northern Machu Picchu! This is therefore a very interesting lot.
