A bright citrus pop seems to come from a lime acidity, but then a sweetness of pineapple follows through. Overall light and spritzy! The Speciality Coffee Growers of Alto Saldana have collectively produced this coffee. 58 producers with an average farm of 4.5 hectares produce consistently good good cup scores. Biodiversity s promoted to help environmental sustainability, so this coffee is grown in the shade of the plantain, walnut, cambulo, chachafruto andf guamo trees. Close to the equator this region enables harvest throughout the year producing fresh flavours and character. Quality is promoted through a meticulous process of washing followed by detailed sorting after drying.

Redemption Roasters commenced operations in Aylesbury Young Offenders Prison with a mission to help reduce re-offending rates by skilling up the young people to help them find jobs and reintegrate into society. They are trained in competition-level barista skills.
The project has now expanded to 9 prisons and now also has an enlarged roastery facility in HMP The Mount near Hemel Hempstead.
Small batches of beans are expertly roasted led by a Head Roaster and Assistant Roaster who also train professional roasting skills. So not only is the coffee ethically sourced but the roasting process is socially responsible too.
